A Pig?

I know what everyone is thinking... why is she showing us a picture of her freezer. Well, we have a freezer full of pig, thanks to some friends of ours. All the white packaging is bacon, pork chops, pork roast, ribs, sausage, ham.... you get the idea. Now, I have to figure out some new and creative ideas to cook pork roast. (We only have 25 or so of them.) If you have any recipes that you would like to share, I am all ears.

Jacob overheard that we had a pig and he did not want to eat a pig. I had to tell him that he eats pig almost daily... he does love those ham sandwiches you know.

Last night I made Spanish Pork Chops, one of Nanny's recipes. It was really good and Jacob even liked it. I guess pig is not as bad as he thought.

In the Good Ole Days...

We had a great time at the Ranching and Heritage Center in Lubbock on Saturday. There were plenty of activities for the kids and the weather was beautiful. Jacob and Riley learned how to grind corn. Cowboy Jacob Learning to write with a feather dipped in ink. Branding a cow. Learning to rope. Washing clothes in a tub and hanging them to dry. Playing games. Making a stick horse. Hand crank homemade ice cream.
Kyle was glad to be home!

Rain, Rain, Come Our Way!!

No, we did not get any rain today...so far. There has been rain all around us, but our farms have received nothing! We did get a lot of wind with dust and pollen in the air. Kyle and I both have colds and he is not sleeping very well because he cannot breathe through his nose. The most annoying problem for Kelly has been the electricity blinking. Every time it blinks, the pivots shut off and he has to go and restart them.

Camp Post

Kelly, Jacob and Riley are at Camp Post for the weekend. Camp Post is a boy scout camp located in (Yes, you guessed it...) Post, Texas. It is required for the cubs to have an adult family member with them to camp and Kelly drew the short straw for this trip. Riley gets to tag along and participate, even though he will not be old enough for cub scouts for another year. The boys are not going to be back until tomorrow morning, but Kelly sent me a few pictures from his phone.

I know what everyone is thinking. What would Kyle and I do with the entire house to ourselves all weekend? Well, we went to Clovis with a couple friends for lunch and then took a nap. It has been very quiet!

I Scream, You Scream, We all Scream...

It was RJ's turn in the kitchen tonight and he mixed up some delicious ice cream! Here are the ingredients.

BASEBALL UPDATE:
We have had a busy week. Jacob started baseball practice last Thursday and they are practicing three times a week. On Monday, he had his first practice with the pitching machine. Thirty Five mph does not sound fast until you see your little guy out there trying to hit it! Jacob did a pretty good job for the first time. We are all counting down the days until summer. 30 days to go!

Riley's t ball practice starts this Thursday. It should be an interesting season. I am coaching with a good friend and neither one of us knows how to catch a baseball. It is hard to believe they let us be in charge of a team! We might not win many games, but I am sure we will have fun.

Bath Time!

Kyle is getting so big! At the doctor last week, he weighed 16 pounds and 8 ounces. He is about to out grow the little baby bathtub, so I decided that I needed to get some pictures before he graduates to the big tub. Look at those rolls. He is definitely a sumo wrestler in training.



On a side note... Kyle started off as the smallest of the three boys, but he has officially passed both his brothers weight at 4 months.

ATTENTION: NAME CHANGE

I just thought I would let everyone know that Riley has changed his name to RJ. He informed me the other day that when he is an adult, he could change his name to what ever he wanted. I asked him what he wanted his name to be and he said, "RJ". So, I told him we could call him RJ now and it has stuck. "RJ" signed his papers at school with his new name today. We will see how long this lasts.

The Dad and Lad Cake

Jacob and Kelly made their Dad and Lad cake for the annual Blue and Gold Banquet. The cake has to be made by the male population only. No mom help allowed. (I did buy the groceries and give my opinion, but the rest was up to them.) Jacob decided on a basketball theme, because the scouts had attended the Harlem Globetrotters back in November. Jacob made the cake, so when Kelly got home they could focus on decorating. The icing started at 8 p.m. The cake was iced with butter cream icing, but the jersey and stars were cut out of store bought fondant. They used a sparkle dusting powder on the fondant to give it the red and blue color. Jacob gave up at 10:30 and went to bed and Kelly finally finished up close to midnight. They didn't win a prize, but I think they had the best cake there!!


Jacob is rolling out the fondant. I know, Jacob's shirt is missing. He had already taken a bath and was about to go to bed. Yes, we do feed him....he is just skin and bones!

First Cereal

Now that Kyle is 4 months old, we get to start cereal. To my amazement, he loved it! I remember that Jacob and Riley were never crazy about the stuff, but Kyle took to cereal quick. He actually wanted to keep eating, but I did not want him to over do it on the first try. I am really hoping the cereal will help with his reflux problems. We will see how it goes!



I am sure the cereal tastes better with your fingers in your mouth.
